Our kitchen has its own culinary signature: shaped by tradition, a style full of character and that special something that has always characterised our hotel – and that many of you value so much.

With Hannes Baumgartner, we welcome a chef who not only brings new ideas but also a keen sense for what has shaped our hotel over many years. His cuisine is clear, honest and deeply rooted in the region – open to new ideas, yet sustained by great respect for our culinary tradition. From the beginning, Hannes exchanged a lot of information with our long-standing Head chef Karl. Many of our guests associate his cuisine with unforgettable memories – and this is exactly where Hannes picks up: with dedication, sensitivity and the desire to continue the tried and tested in a contemporary way.

A chef with character & taste

Born in Issing (Pfalzen) and brought up in a traditional family of restaurateurs, Hannes Baumgartner was literally born with a passion for cooking – his father was his first great role model. It was clear to him early on: the kitchen is not just a workplace, rather it is a vocation. After completing his training at the hotel management school in Brunico and at the technical college in Ftan (Switzerland), Hannes gained international experience – including on Sylt (Germany), in Friedrichsruhe (Germany), York (UK), and Verona (Italy).

He not only cooked everywhere, but also learned from chefs and commis – and above all from the honest use of good ingredients.

What can be said about his cooking style? Regionally rooted, straightforward, with a fine sense of tradition and quality. He loves the classic South Tyrolean dishes – Schlutzkrapfen, Wiener Schnitzel, dumplings – and brings them to your plate with artisanal precision and modern lightness. In the kitchen, as in life, authenticity takes centre stage for him – and respect for people, nature and products.
